A proud Paso Robles native, Chef Rachael Zollo has always felt a deep connection to the vibrant culinary and agricultural landscape of her hometown. Her love for cooking was sparked at a young age after watching the beloved film Ratatouille—inspired by the little chef mouse, she dreamed of creating dishes that bring people joy, warmth, and connection.
Over the years, Rachael honed her craft through dedicated study and hands-on experience, transforming her childhood passion into a lifelong pursuit. Today, she brings that dream to life in the Enoteca kitchen, where she delights both local and international guests with her Mediterranean and Italian-inspired cuisine.
Chef Rachael is especially passionate about pairing food with wine, thoughtfully curating flavors that complement the renowned wines of Paso Robles. She also takes pride in sourcing fresh, seasonal ingredients from local farms and purveyors, ensuring every dish reflects the region’s bounty and her commitment to sustainability.
